Paleo & Gluten Free Chocolate Brownie Muffins

IMG_2779I apologize in advance for the obscene amount of chocolate recipes I have coming up to share. I’m not sure what’s going on, but all of the days I’ve been in the kitchen for recipe development have ended up with cocoa powder and chocolate chips! Sometimes that is not necessarily a bad thing. I do love brownies, and I do love muffins (check out my awesome Paleo Brookie recipe here), so I thought that I could do the same in this situation! Why not turn a brownie into a muffin? A paleo, gluten free, decadent chocolate brownie muffin? Well, here it is. Look no further for something you shouldn’t feel guilty about having in the morning for breakfast, in the afternoon for a snack, or as a dessert. Taste testers told me these were sweet, but not too sweet, perfectly moist and had a great texture. I hope you feel the same way, cheers!

Paleo & Gluten Free Chocolate Brownie Muffins

Cook time:  20 mins
Total time:  35 mins
Serves: 9 muffins
 
Ingredients
  • ½ cup coconut flour
  • ½ cup coconut oil + more for greasing pan if needed
  • ½ cup raw cocao powder
  • ½ cup enjoy life chocolate chips
  • 3 eggs
  • ¼ cup almond milk
  • ¼ cup honey or maple syrup
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat the oven to 375 degrees
  2. Mix dry ingredients in a bowl, set aside
  3. Mix wet ingredients in a bowl
  4. Add dry ingredients to wet ingredients.
  5. Mix in chocolate chips.
  6. Grease muffin tin
  7. Divide mixture evenly into muffin cups (mine made 9)
  8. Bakers Tip: if you fill the empty cups with water the muffins will cook more evenly!
  9. Bake for 18-20 minutes or until a knife comes out clean
  10. Allow to cool for 10-15 minutes
  11. Enjoy!

The Paleo Brookie

My sister recently mentioned that she tried to make some Brookies… what’s a brookie, I asked? She told me brownie on the bottom, cookie on the top! I was intrigued! Her recipe didn’t really turn out, but I have been thinking about it for the past week, and with nothing sweet in the pantry, I wasn’t crazy about breaking down and eating some of my husbands junk (i.e. processed foods that he asks me to keep in the house). So while my grandparents were visiting this weekend (now granted, in retrospect I should have been sleeping), I did some baking. I think it was totally worth it though. These gluten free, paleo brookies were a really big hit! I made them in muffin tins, which I think helped them cook more evenly, but then also gives it a fun, finger food vibe - easy to grab and not feel guilty about taking one! And they aren’t huge, so it’s not too much - I’d bet they also be perfect as mini muffins! I hope you enjoy these (gluten free/paleo) brookies as much as we did!

The Paleo Brookie

Yield: 12 brookies

1 brookie

Ingredients

    for the cookies: adapted from The Kosher Cave Girl
  • 1 egg
  • 1 cup tapioca or arrowroot flour
  • 1/2 cup Enjoy Life chocolate chips
  • 1/2 cup coconut oil, melted
  • 1/2 cup coconut sugar
  • 1/4 cup coconut flour
  • 2 tablespoons almond milk
  • 1 tablespoon vanilla extract
  • 1 teaspoon baking powder
  • for the brownies:
  • 1 cup honey or maple syrup
  • 1/2 cup coconut oil, melted
  • 1 egg
  • 1 cup almond butter
  • 3/4 cup raw cacao powder
  • 1 tablespoon vanilla extract
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon baking powder

Instructions

  1. Combine wet cookie ingredients in a bowl, mix well, and set aside
  2. Combine dry cookie ingredients, sifting well
  3. Add wet cookie ingredients to dry cookie ingredients and set bowl in the refrigerator for an hour to chill
  4. Preheat oven to 350 degrees
  5. While cookie batter is chilling in the refrigerator, combine brownie ingredients in a bowl and mix well (you could even use a food processor or blender to do so)
  6. Using a muffin tin, line with paper cupcake liners, or grease each cup well with coconut oil
  7. Fill each cup half way (will fill 12 cups) with brownie batter
  8. When cookie dough is chilled, scoop out 1/4 cup of batter
  9. Flatten batter into a pancake shape and set on top of each cupcake filled with brownie batter
  10. Place cupcake pan in the oven for 30-35 minutes at 350 degrees (or until a knife comes out clean)

Orange Lemon Brownies

Orange Lemon Brownies

I found a few weeks ago I had a lot of oranges on my hands (I’ve been craving some serious citrus these past few weeks). I was brainstorming different ways to use all of them, knowing I had all of them to cook or bake with before they all went bad! I scoured my recipe books, torn out recipes from magazines, pinterest, etc. for some inspiration. I found a few ideas for lemon brownies, and the wheels began to turn!

A few hours later and I had started testing batches of these brownies. Perfect for someone who loves citrus, or just an alternative to a chocolate sweet. Gluten free and paleo, of course, these are great for a lighter dessert (I’ll bet they are great served with some ice cream on a warm night) but don’t take my word for it, try it yourself!

Orange Lemon Brownies

Ingredients

  • 1/2 cup coconut flour
  • 1/2 cup coconut oil, melted
  • 1/2 cup non dairy milk (I used almond, but coconut milk would be perfect!)
  • 1/4 cup honey
  • 1/3 cup fresh squeezed juice (of orange or lemon, depending on what flavor you'd like)
  • zest of one orange
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Instructions

  1. Preheat oven to 350 degrees
  2. Melt coconut oil and mix with honey
  3. Stir in orange juice, vanilla, eggs and zest
  4. In a small bowl, mix dry ingredients
  5. Mix wet and dry ingredients together and whisk well
  6. Add milk to the mixture and whisk until there are no lumps
  7. Grease a brownie pan with coconut oil (8 X 8 or 9 X 13) and pour batter into the pan
  8. Bake brownies for 35 minutes or until a knife comes out clean
  9. Wait until the brownies are cool before serving
